If you're going to Dallas, Texas from California, then may I suggest a one-day visit to the Gateway Arch in St. Louis, Missouri. The arch is 630 feet tall, and you can ride the tram car (inside it) to the very top for a view of about 35 miles.

Eat your weight in BBQ. The kennedy assasination spot is strange and makes it much more real. i cant think of much more.

Perot Museum is a state of the art, kickass nature/science museum with lots and lots of American dollars behind it

Sixth Floor museum and Dealey Plaza cover all things JFK

Klyde Warren park is a great place to experience the ridiculous weather conditions that Texans will try to ignore and convince themselves are worth being outside in.

Dallas Karting Complex is about an hour on the northwest side of town, but it's a fantastic rental (real karts, too) facility.

The original Six Flags (as in Six Flags Over Texas) is in the DFW area, and is pretty significant as one of the best of the original-modern amusement parks.

Ft. Worth is where you want to go if you want to see all of the chintzy cowboy/horse/boots/hats/prototypical "Texas" crap that doesn't actually exist.

Contrary to what you may think, there's very little good BBQ in Dallas, as any Texan worth his weight in oil will tell you. Texas BBQ is absolutely the best in the nation, but the really good stuff doesn't start until you get south of Waco towards Austin and the hill country. That said, there are a couple of places worth going to in Dallas: Pecan Lodge at the Dallas Farmer's market (be prepared, though: 1 hr+ wait in line and it's weekends only and they're sold out by 1130 most of the time), Slow Bone BBQ, and Lockhart BBQ in Bishop Arts. Protip: if you're eating BBQ and it's the real deal, go for an early lunch. There's no such thing as good BBQ after lunch, because real barbeque is a long, 10+ hr process that is timed to produce its best fruits right at lunchtime.

If you want a taste of what Austin is like, and I use that qualifier very carefully because there's nothing like Austin, the Bishop Arts district just south of Downtown is a cool little area. You're close to the hood, but it's culturally rich, the food is great, and there are some interesting shops. It's not a huge area, but it's worth checking out if you want a tiny, tiny, tiny little sliver of what Austin is like.

Deep Ellum is a cool, diverse little strip of Dallas with good eating, live music. Small, but nifty.

I'm lukewarm over Dallas (and not just b/c I'm a Redskins fan). Fort Worth I found really interesting and fun. Downtown Dallas was pretty dead the times I was there, guessing some of the outskirts have some interesting places to go.
